I wouldn't worry too much.  The people there know that tourism is their major industry and the areas like Roatan are far, far away from much of the turmoil. 

I was in Thailand this past April during a similar situation where there were mass protests and eventually a state of emergency declared during the last several days of our trip.  I happened to be in Bangkok at the tail end of my trip during the largest escalation of these events, and even then you'd really have to go looking for trouble to find it.  Knowing what was going on, a few times I noticed things like unusual police/military activity and small groups of color-coded protesters, but the vast majority of the city was business as usual.  In the more remote diving and tourist areas, it was non-existent.

No worries in Roatan. We were there 10/3 - 10/10. When you arrive at the airport the CoCoView van is waiting for you. Your luggage is separated out by your CoCoView luggage tags (keep them, you will need them when you return to the airport). The van took us directly to the dock and a boat was waiting to take us to the resort. Our luggage followed soon and was taken directly to our rooms. We generally like to see more than just the resort we are staying at. There were multiple ways to do this. In our case we did a full day of diving away from CoCoview (reef shark and dolphin). A CoCoview boat took us to the shark dive. The staff had a van waiting for us when we finished to take us on to the dolphin dive. A lunch was waiting for us in the van. We were driven around to the other side of the island to Anthony's Key. The driver gave us a nice little tour as we drove around the island. Once we finished at AKR the drive took us back to CCV. Prices were affordable for a full island tour in the van.
Another option: One of the dive boat decided that they would like to go to the West End for a day of diving and sightseeing instead of the scheduled dive sites.
